As Ive got a new tall, deep 6 gun cabinet arriving soon my plan is to turn my exisitng 4 gun cabinet into an ammo storage unit.  Has anyone any tips or suggestions on how to add interior shelves?  If possible I'd like to aviod drilling holes in the cabinet just in case I want to sell it at a later date.

If it were me I'd just buy ready made Ikea type pine shelving with the side supports and just plonk that inside the cabinet. If the cabinet is wide enough you may not even have to reduce the shelves to suit. 

 
Thinking of the weight of “ slabs “ , I’d be looking. At getting some slotted steel angle strip ( like Dexion type shelving )of a suitable size   . Cut to length and width , then bolted together to be self supporting inside the cabinet . Then cut MDF for the shelving .  It should meet your objectives of storing cartridges and be easily removable .
